The bavette steak is one of our family's favorites, it is a long, lean, and tender cut of meat with a very rich flavor that comes from the bottom sirloin. The bavette steak has unique muscle fibers that give this cut an amazing texture, especially after our dry ageing process.
This cut is a breeze to cook in a cast iron skillet or on the grill. This cut is truly amazing when seasoned with salt, pepper, and olive oil, grilled over high heat, then served with chimichurri. It also holds a marinade really well and it is best to cut against the grain after resting.
All of our beef is USDA approved and dry aged for a minimum of 21 days. All of our steaks are cut at 1½"- 1¾"thickness. Each bavette steak is individually vacuum sealed, ships raw, and frozen.
