Beef shanks are located beneath the brisket, shank meat is cut from the leg above the knee to the shoulder or hip. Being a cross-section of the leg, which is used extensively for movement it is typically best braised or stewed to make tender. When stewed or braised, shank meat provides lots of rich beefy flavor. Shanks are perfect for an easy crock pot meal.
One of the more well known dishes that use shanks is the Italian dish Osso Bucco. Which translates to “bone with a hole” describing the shank meat cut. This dish is stewed in wine, carrots, onions, tomatoes, and chopped celery.
Another added benefit of the shank is that it includes the bone marrow and the connective tissues contains collagen. They can be used in soups or stocks for added health benefits. The bone marrow can be spread on toast with a touch of sea salt for a rich and buttery taste.
All of our beef is USDA approved and dry aged for a minimum of 21 days. Each shank is individually vacuum sealed, ships raw, and frozen.
