Short ribs are a tender cut that will fall off the bone when properly cooked. They are cut from the lower part of the cow’s rib cage (the short plate) behind the brisket. Short ribs have a lot of fat content, marbling, and connective tissue, because of this, they are a a popular choice for low and slow cooking methods. One of the great things about short ribs is their versatility, they can be smoked, slow cooked, braised, or barbequed.
Our short ribs come in packages of 6. All of our beef is USDA approved and dry aged for a minimum of 21 days. Each package of short ribs comes individually vacuum sealed, ships raw, and frozen.
